Creamed corn pasta

Well this was a last-minute piece of inspiration gone right! Man! I started thinking about pasta, then saw some corn. Hmm... corn, butter, basil maybe with a kick? A slight Mexican influence with jalapeño and queso fresco... Oh, and look at that whey. And wouldn't this be beautiful atop my sepia pasta from Italy?! Friends, this was a win, and I will post this recipe and make it again. Absolutely delicious!

Delicious new couscous dish, solid greens recipe

This couscous salad was really wonderful and will definitely move into rotation over here. YUM! Summer squash, mint, pistachios, sultanas and wonderful, subtle lemon-garlic dressing. Seriously good, and so pretty. I love buying newly picked produce (here the squash) and using it later that day: the fresh factor is unreal. I also used the collards from our FM outing with corn T bought just yesterday in this collard/corn/bacon dish which is also quite lovely to look at. Corn and bacon are such nice friends, as are collards and bacon. This recipe is so thoughtfully constructed but I would a) cook the bacon until crispy and b) slow-cook the collards to get the silky factor that in this dish, as written, is missing. They were too chewy for my taste, and as the lardons weren't crisp, the double-chew factor was disappointing. Crispy bacon would be a great textural counterpoint to the corn and collards, especially if the collards were smooth as they can be.

Sunday FM

Oliver and I hit the farmers market this morning and had a great time. Sour cherries were out!!! There were still strawberries! Look at these gorgeous green onions, squash and Hakurei turnips!! I'm not sure I'll have time to get to the cherries before we leave so think I'll do a quick freeze on them, but the strawberries need to be canned, so I'll make that happen. Right now, I need to make chocolate cupcakes and brownies for the faculty appreciation lunch at J's school which is tomorrow, his last day. And then we're off to the beach first thing Tuesday. I am not a big beach person. Fish Belly is the color my mother often ascribes to my fair skin, I hate sand in random places, and neither boy can swim, but alas. It will be nice to be with family, and I really want the boys to know their cousins. Off to cook!
