Caramelized shallots, pumpkin cheesecake

The cheesecake is in the oven and looks divine! I added a splash of Bourbon to the mix because why not?! I also just caramelized some shallots for that ridiculous burrata dish we're having later. They look superb.

I also had three sips of wine and feel good about doing so. Heh.
