Meatless Monday
/Today was a lovely one all around. A shower! Class! Casual leaf viewing and appreciation while talking to one of my best-ever friends! And then, a terrific Meatless Monday dinner with T. I love Mollie Katzen's way of thinking about veggie-based dishes -- side by side, rather than on the side -- and so tonight took that literally by serving two veggie sides as our main. Almost everything I used came from yesterday's farmers market, including the leeks and fennel in my warm caramelized salad.
And the turnips and kale in this delightfully creamy new mash I concocted. Potatoes, buttermilk, salt, white pepper, a tablespoon of butter, and a dash of maple syrup rounded things out swimmingly.
For dessert? Last night's Homeland!
