V-Day meal and more

People, it's not possible to do Chicken Kiev justice without forcing a warm, buttery piece into each of your mouths and letting you understand for yourselves. However, because that's unrealistic and I don't want to share my breaded wonders, I'll attempt to do the dish justice with words. Imagine a gently-pounded chicken breast wrapped lovingly around a slab of compound butter full of tarragon, parsley, shallot, salt and lemon juice. This precious package is then dipped in an egg-Dijon mixture, dusted with flour and dredged in crisp breadcrumbs before being placed on a rack set in a rimmed sheet pan.

You must then wait an interminable 40 or 45 minutes while these beauties bake and crisp, but each step and the time needed to do them are critical. The wait makes the reward that much more special because when you finally apply fork and sharp knife to the golden exterior, a stream of steaming, fragrant butter rushes toward you, pleading with you to hurry, swirl a cut of chicken in the glistening pool and take a bite already.

If only this photo were better, and if only I'd make extra Kievs. They are a sublime creation, and T and I savored every morsel.

To go alongside, I wilted some fresh purple mustard greens, sauteed some gorgeous, just-shucked English peas with celery and tarragon, seared some blood orange slices, seasoned the mess and plated it lovingly. It was a delicious mix of flavors and textures.

Chicken Kiev is amazing

Y'all, T came home earlier than expected (bless him!) so I finished up supper while he finished up bedtime. We had a 10 minute dinner together before I left for my meeting (a very good meeting), but it was totally worth rushing to indulge in this treat. Seriously, y'all, is your mouth watering? Although I told you this dish is a labor of love, it took even longer than I was expecting. Again, totally worth it but never make just two, as I erroneously did tonight. My hot toddy (so medicinal) and I are now off to bed.

Pies, dressing, mini-pies, chicken Kiev

I have definitely felt lousy today and am honking like a goose. Blah! Boo! So, I stayed home drinking tea and cooking which was, admittedly, quite nice. Tomorrow is Ol's Thanksgiving Feast at school so I made two pumpkin pies for that + two mini pies with the leftover batter. Then I made the beef-n-Trinity mix for some Louisiana rice dressing for our own Thanksgiving feast next week. The mixture freezes beautifully so that next week all I need do is thaw, toss with freshly cooked rice, and warm through. I'll do the same prep with turkey sometime soon that I'm equally ready for whip up some cornbread dressing. I've also - finally!- jumped into Kiev-making. The shallot-herb butter has been chilling all day, fresh breadcrumbs are cooling now, and the chicken is seasoned, stuffed and now resting in the fridge before I dredge and cook it. The only and quite major bummer about this is that I have a meeting at 7 and won't have time to finish the chicken before then. Lucky Tom will definitely enjoy his share!!
