Crostini with ricotta, saged butternut squash and green apple
/Reminiscing about some of the food we enjoyed in Charleston, I recalled that last night I'd roasted some diced butternut squash in anticipation of recreating Social's bruschetta with ricotta, squash, apple and sage. Luckily I had some fresh ricotta left in the fridge and had remembered to buy a baguette and green apple earlier today. I need to go a bit heavier on the sage next time, but this was an excellent start, and I just downed all of these as part of the solo dinner I'll be enjoying tonight.
