Totally awesome dinner of creamed kale

Whoa! This was soooooo darn good. I wanted to use up the rest of the bunch of kale I had in the fridge as well as some from my garden (growing like a weed out there) but was feeling a bit bored with the whole olive oil/garlic sauté. As this would be my entrée, I figured, why not also use up some of the buttermilk and cream I've got? I then spied some stale baguette so made some garlic and olive oil toasted breadcrumbs, set those aside and in the same skillet wilted the greens and then added a tablespoon and a half each of the dairy goods. Into a bowl went the mess of greens, and I then topped them with the breadcrumbs and served it all with two slices of toasted, multigrain seed bread (I love to sop up sauce and make "sandwiches"). For my side, I enjoyed the remainder of last night's potatoes with cheddar and caramelized onions, and let me tell you, the onions were a good pal to this creamed kale. This is a definite keeper, and I will post the incredibly simple recipe ASAP.
