Compost salads aren't only for lunch

Having blanked on Meatless Monday when I chowed on the chicken and apple chutney earlier, I made amends with this glorious salad tonight. Have you ever seen such luminous lettuce? Incredible. So I went with the purple-green theme and thought this was really fetching. Delicious, hearty, and now I'm off to bed.
