Cheesecake in the oven
/Wow, this really looks good. It's a blend of cream cheese, goat cheese and crème fraîche plus sugar, eggs, vanilla and a bit of freshly ground black pepper. The batter was heavenly, so light, a nice but not overwhelming tang. To top it off, you stew sour cherries with sugar, water and balsamic until fairly thick and syrupy. Doesn't that sound heavenly!? I once had a goat cheese cheesecake at Palena, one of my favorite restaurants here in D.C. Alongside it was a stewed prune and apricot compote, and the complete package was absolutely perfect!
Off to make the pistachio aillade. Mmm.
