Beet tart in the oven

Well, this is a complete invention, but I have to say that it looks delightful. I made a whole-wheat olive oil crust infused with orange zest and chopped mint. Into that I put a mixture of crumbled Bûcheron and regular goat cheese; atop that I put onions that I'd caramelized in olive oil, salt, pepper and some reduced balsamic vinegar. Then I shredded a few leaves of mint on all that and topped things off with the beets I'd roasted yesterday, now slivered into 1/4" thick rounds. It's quite pretty- hope it tastes good!
