Apricot ice cream cake debrief
/Ok, after unmolding and tasting the cake last night, I felt I'd chopped the caramelized apricots into chunks too large for the delicacy of the ice cream base. So, I ultimately put it all in a blender -soaked ladyfingers and all- and then re-spread that atop new ladyfingers before freezing again. Delicious, refreshing, just tart enough. And pretty, yes?
