Papaya and Cantaloupe with Lime Vinaigrette

Summary: Summertime is a season during which even the most ardent fruit lovers may feel overwhelmed. Peaches, plums, berries, melons... Everything is so delicious but it can be difficult to keep up, and at the end of the day, standard fruit salads may start to lose their luster.
This one pairs two underutilized melons with a zippy lime vinaigrette and fresh mint. It's healthy, beautiful and full of flavor!

Yield: serves 2-4

Ingredients:

  • half a ripe cantaloupe, rind removed, fruit cut into chunks
  • half a ripe papaya, skin removed, fruit cut into chunks
  • 1/4 cup freshly squeezed lime juice (about 1 lime)
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon honey
  • a dash of cardamom
  • salt and pepper
  • 6 mint leaves, torn

Instructions:

Gently toss the cantaloupe and papaya chunks together in a medium-sized serving bowl.

In a measuring cup or other high-sided vessel, whisk together until well-combined the lime juice, olive oil, honey, and cardamom. Season well with salt and pepper and pour over the fruit. 

Top with the torn mint leaves and serve.
