Caramelized Asian Pears

Summary: Lovely as a side treat or atop grilled salmon
Ingredients
- 1 large Asian pear
- scant 2 T butter
- 2 T coriander sugar (or whisk ground coriander into cane sugar)
Instructions
- Thinly slice the Asian pear (don’t peel) into 1/8″ thick rounds and slices, working around the core.
- In a 10″ skillet, heat the butter over medium-high heat until melted and bubbling. Add the coriander sugar and when it starts dissolving, lay the pear slices atop. Their edges can touch or overlap slightly but give them space!
- Turn the heat down to medium-low, flip the slices to ensure equal caramelization and when the pears are lovely, fragrant and golden brown, remove and serve.
Quick notes
These are divine served atop apple butter. I’ve also served them on grilled or pan-roasted salmon.
Variations
If you don’t have an Asian pear, try a regular pear or apple.
