Moroccan Carrot Salad

Summary: This is an absolutely delicious, simple dish from Claudia Roden.

Ingredients

  • 1 pound carrots,* peeled and coarsely grated
  • 1/2 c black or golden raisins
  • 4-5 T extra virgin olive oil
  • 1-2 T honey
  • juice of 1 lemon
  • 1/2 tsp fresh ginger, grated or very finely diced
  • 1 tsp cinnamon
  • s & p

Instructions

  • Mix everything together in a bowl.
  • *If you can find rainbow carrots, slice them into thin rounds instead of grating them. They are so pretty!
