Moroccan Carrot Salad

Summary: This is an absolutely delicious, simple dish from Claudia Roden.
Ingredients
- 1 pound carrots,* peeled and coarsely grated
- 1/2 c black or golden raisins
- 4-5 T extra virgin olive oil
- 1-2 T honey
- juice of 1 lemon
- 1/2 tsp fresh ginger, grated or very finely diced
- 1 tsp cinnamon
- s & p
Instructions
- Mix everything together in a bowl.
- *If you can find rainbow carrots, slice them into thin rounds instead of grating them. They are so pretty!
