Spinach-Feta Salmon Burgers

Summary: So easy, so good, so healthy.
Ingredients
- 1 pound fresh salmon (I use sockeye or coho), finely diced or ground
- 1/2 c spinach (fresh or frozen)- if frozen, thawed and drained; if fresh, steamed, cooled, drained
- 1/3 – 1/2 c crumbled feta
- salt and pepper
Instructions
- In a large bowl, mix the ground salmon, spinach and feta. Season with salt and pepper and mix so that everything is well combined.
- Form into patties or freeze or grill.
Number of servings (yield): 5-6 patties
