Coriander Sugar Poached Figs

Summary: These are just so, so good. Sweet, spiced, fresh!

Ingredients
- ~1 pound fresh figs
- 1 c water
- scant 1/2 c coriander sugar*
- 5 allspice berries, cracked gently
- pinch coriander seeds
- 1 generous grind fresh black pepper
Instructions
- In a deep saucepan large enough to hold all the figs in a single layer, place said figs. Sprinkle the sugar over them and then gently pour in the water. Add the remaining spices, and bring to the boil. Once boiling, turn heat down until you’ve got the mixture going at a nice simmer. After 15-20 minutes, remove figs with a slotted spoon and let the syrup cook down some. Once it’s to your preferred consistency, let it cool and pour back over the figs.
- Serve immediately with toasted bread and blue cheese, over fresh ricotta or greek yogurt, or chill and just eat with abandon whenever the mood strikes.
- *I was given a can of Sucre Roux a la Coriandre which is, in essence, coriander-infused sugar. I suspect you might be able to whisk coriander into unrefined cane sugar and achieve a similar result.

I tested your Fennel Leek and Orange, and I wrote to tell you how I enjoyed it.
Now I am here as a result of snooping around the Internet in search of Sucre Roux a la Coriandre proportions. I can’t tell you how thrilled I am to discover you here, and to see this recipe for figs!
How I LOVE the idea of eating deliciously prepared figs! Thus far, up until a few minutes ago, I have not seen nor created something that would wow my taste buds and my aesthetic appreciation for beautifully created food.
I will adoringly await fig season knowing that this recipe will be deliciously delightful!

What a treat to be in touch with you again! Thank you so much for writing. I must admit that this fig recipe is one of my favorite dishes. WOW! Serve them and some of their syrup atop fresh ricotta, and you’ve got a breakfast of champions. I, too, eagerly await fig season. Last year I loved these so much I planted a fig tree in my backyard.
